When life gives you kale…

How yummy!  Kale is one of the superfoods, full of powerful antioxidants. Plus, it tastes delicious when cooked in the oven with a little bit of olive oil and salt.

To prepare kale “chips”, preheat the oven to 350 degrees.  Wash the kale, remove the center stem, and tear the leaves into bite sized pieces.  (If you have trouble removing the stem, try folding the leaves in half and pull up on the stem with one hand as you hold the leaves closed with the other.)  Place the kale pieces on a baking sheet covered with parchment paper.   Pour a little bit of olive oil on your hands and rub the olive oil into the kale pieces to lightly and evenly distribute the oil.  Sprinkle with salt, Old Bay, or any other seasoning you desire.  Bake for about 20-30 minutes until crispy.
